Our chef thoroughly researched the taste, aroma, and texture and finally arrived at pork from Okinawa Prefecture.We use shoulder loin, which has an outstanding moist, smooth and sweet fat, and let it sit for 72 hours to bring out the maximum flavor.When you cut it, it has a beautiful pink color, but please rest assured that it has been thoroughly cooked using a special cooking method.
